"Of all the knowledge that Autumn fairies consider 'evil', I suspect cheesemaking seems the silliest to mortals. Mortals think "Yes, we get it: repeatedly molesting a cow for your own personal gain is evil. But fairies don't consider eating meat to be evil, so how is this worse?" But that's not the reason!
As you know, the alchemical formulae for cheese are quite simple. But as with all alchemy, powerful ingredients give powerful results. In this case we're working with an animal's sacrifice in liquid form, quite a powerful source! You see? That's why they call it evil: ALL magic powered by sacrifices or suffering are considered evil by the Autumn court.
We Winter fae don't care about such things. But I wasn't kidding when I said I knew the dark arts of cheesemaking: since the Autumn fae consider it evil, Autumn practicioners are called Dairy Witches. I think that's wonderful. Here's one of their dark formulae. Try it some time. It's not bad.
