Vegans in the Star Citizen universe can refer to either the inhabitants of the StarCitizen:Vega system or to people who follow a vegan diet.

Vega system

The Vega system is an unassuming four-planet system orbiting a G-type Main Sequence star. Once seen as a potential centerpiece for rapid StarCitizen:Human expansion that might someday compete with the likes of StarCitizen:Earth and Terra, Vega has suffered as it has found itself on the front lines of the StarCitizen:Vanduul conflict. Vegan diet

Vegan products are present in the game, implying the existence of vegans following the vegan diet. Examples of products include the StarCitizen:Vegan Delight Omni Pack.
